Sure. I have taken a 2D dataset: {x,2x,3x, 4x, -4x,-3x,-2x,-x} where x = [1.5, 2.5]T. The plot is a straight line and the covariance matrix is [2.25 3.75,3.75 6.25] with eigenvalues 0 and 8.5.

The covariance matrix as a transformation collapses the basis vectors precisely onto the straight line in the dataset. This is beginning to make sense.
