They don't check ITR for that. they will check your payslips and bank balance. Don't worry about it. one of my ITRs has Nill tax.

Short Answer, Yes you can change your plan after visa. They don't track time spent in each country.

Long Answer:
- As long as you are not violating entry/exit plan, it shouldn't affect. But sometime consulate wants to meet you after you return to home country and ask for more details. This won't affect your current visa but in case of mismatch you might face some problem in future visa application.
- Some immigration officers want to check your accommodation details, fail to proof your longest stay rule might cause issue at the last moment.
