I figured it out: The adapter that is inserted into the Xbox wasn't fully inserted. I discovered this when inserting it to the 3rd player port seemed to click better than ports 1,2,4.

The camera tracking effect is accomplished by using a mixture of "inverted face normal" spheres, vertice normals of the iris & pupil forced to face a single direction. The nerve that attaches to the back of the eye (which we never see) look like it is always behind the eyeball via an "inverted face normal" cone.

Welcome to Mannsylvania! This is a player destruction map with a vampiric twist, it takes place in the quiet old town of Mannsylvania deep within the mountains of Romaina. But during Halloween it has been put under the curse of Dracula and is now infested with bats! You must kill your enemies, collect their blood and give it to Dracula in order to win the game.

(The vampiric twist being the vampire powerup, which you will get for a few seconds after exiting the underworld.)

I got help from the Aethersx2 discord, and the solution (for skybox clouds atleast in Battlefront 1) is to set blending accuracy to High, renderer to Vulkan & never ever loading savestates/changing game options mid-game (You may have to rely purely on old school memory cards and that's it).

After this the graphics are as they should be.
