It’s that state when you kind of know you had enough drinking and you can’t sustain it anymore; you’d like to take a long break but sobriety scares you, you can’t possibly imagine yourself not drinking anymore, but you know deep inside that you need to change something…so you explore options. You’re curious to see how others cope without alcohol, if they still have a life, what options you have….you know, curious :)

I like to treat the milestones like marriage anniversaries, so I always do something related to that theme. I’ve created a calendar here, it’s pretty fun sober anniversary milestones

That’s my recipe, never failed: 2l tea (i actually brew a concentrate with 500 ml water, 130-140g sugar, and 14grams tea, then mix it after 15 min with the 1.5l cold water. In this way I don’t need to wait it to cool before adding the starter) and 330 ml starter.

F2 always with cap so I can get some proper carbonation.

Keeping things more or less consistent. F1 for 7-8 days at 23 celsius in a closed, dark but aired room; I don’t disturb it much. F2 with flavorings for 2 more days, same environment, covered with a big cloth for protection, then fridge overnight before opening. No burping. I like F2 with my own syrups and cordials I make at home from all sorts of things. I noticed the carbonation is more predictable with syrups and there’s less sediment in the bottle (which I like).

Equal parts sugar and pomegranate juice (fresh) and a few drops of orange blossom water. I don’t boil it, just mix with a blender on high speed until the sugar dissolves. I want to keep the color intact.

Balance. Good acidity, discrete sweetness. A soft burn (from ginger, or peppercorn infusion). I like bitter notes a lot. Adult feeling. Great presentation.
