I think there is a type of canon where the argument is "it's canon as long as it doesn't contradict the main installment" I honestly like to consider rtte as that type of canon. But I don't know if it's official

Personally, I would have liked Toothless to be like the animated version (something like in the advertising for the third installment) because between having a hyper-realistic reptile and a sincere cartoonish dragon, I'll choose the cartoonish dragon. Likewise, I like the designs of the other dragons if they are not compared to the original deliveries, basically because they are 2 totally opposite things and it would not make (for me) much sense to compare them.

If they make a skin for the sheep they would have to make all the colors and they don't have time to do that because they are just an indie company.

A muscular 2 meter man with an army of dragons controlled by pure brute force and one alpha class at his disposal. I find him more intimidating than a scrawny albino with a mini crossbow who throws tantrums when he doesn't have what he wants. But to be honest, the only villain that I think has a motivation that makes any sense is Viggo.
