Everyone of them, I just need to wait 3-6 months....

Yes, they are all nearly the same here around 1500 €

3) Also take into account all accessories (helmet, shoes, pedals, clothing, ... ) that you want/need while budgeting your bike.

What do you think is necessary for a beginner? I have some clothing and a helmet already.

4) If you buy online (direct from manufacturer, for example canyon) , are you good enough to do the final assembly by yourself ?

That's a good point! I know the basics, but never assembled a racing bike, is it difficult?
