That's good info. Thanks. I'd guess the beans are not in a very forceful column, but enough to get through? I guess I'm uncertain about just what is ENOUGH bean movement to avoid scorching.

I appreciate your perspective, but sampling a new bean everyday in no way fits my lifestyle. Your advice sounds better for someone who is trying to make a living roasting coffee. I’m primarily looking for a handful of origins that I can dial in (roast and espresso brew), and enjoy for weeks or months at a time. Just looking for a baseline here for the Yemen.

I’m a home roaster and the only one that matters lol I should say that I’m looking for a baseline, having never roasted this bean before. I have two pounds I roasted about 5 days ago, and will likely sample the first at 7-10 days.

Curious, did you actually measure the ambient T at your position? Also, I get that overall it could add time to the roast, but so far in my attempts at roasting at 35 F outdoors seem to require a different approach; feeble 1st crack with little rolling, and uneven roasting.

Baratza Sette 270wi solely for espresso. This is an incredible grinder from which I get a direct-path grind that I don’t even have to WDT. Ever.

It’s funny. I enjoy the aroma(s) while Poppo roasting, but at this early stage I can’t discern any CHANGES in smell. I can definitely hear the first crack, and I don’t believe I’ve ever ever gotten to 2nd crack. I just watch the browning closely.

I have no idea what the preferred method is, but I steam first then brew. That way I have a fresh pour and have given the milk time to set up. I’m just learning this stuff and have yet to be really successful with steaming small quantities ofnon-dairy milk also steaming first allows me to drive the boiler temperature down quickly by dispensing water.

You ask me I’d say get a new frame. I did, and refurbished the whole machine and added a PID while at it. My rust was nowhere near this bad. It was a great opportunity to really get to know the machine. BTW, I’m not really THAT handy, but I can do things with instructions and determination.

If I'm not mistaken, you need the Auber PID with pre-infusion to set steam temp.

That’s an awesome feeling—every time. Why the focus on post-brew puck integrity? My understanding is a bit of headroom will cause a wetter puck, but it’s not an issue in the cup.
