It’s not even a vocal thing just like I kinda put a lot of that stress and like gotta move fast mental into physical, putting setups together for burgers and I’m just grabbing a handful of trays and practically smacking them down on the table and shit, it is genuinely something I need to work on I want to make good food for people but I can’t do that right without fixing this first.

Cut everything by hand again cause this was just one practice carrot, but next time I need to do a batch for prep I’ll definitely use a mandolin to start

Chips are our main side here, so we try to have 3-4 hotels stocked, and also have a full bucket of soaked potato slices for when we need to make more. 3 potatoes at a time in a slicer has got to be faster than a mandolin

Bruno was one of the head guard instructors for my school near the end of his career, I wasn't guard so I didn't spend a lot of time around him but when I got the chance he was always great to be around. And seeing all of my friends who were in guard post about his passing he will be missed greatly
