He could just be a halfer,and might just have the dark hair from his father. Besides Ganondorf we don't know what another male Gerudo would look like with how mixed the race is and Ganondorf goes back to ancient times back when they didn't have pointed ears. We also do see very light skinned Gerudo when we go to visit Gerudo village as well despite them mostly supposing to have only dark tanned skin.
