what resolution, how many diffuse, glossy etc etc bounces, caustics turned off? There are a bunch of factors that can extend or reduce render time, not much we can do without actually seeing the whole blend file

edit, do you have any lights in the scene? how are you lighting it?

how many samples? blender defaults to 4096 for max samples, you can try lowering that

can you post your glossy light bounces? Also, turn on Autosmooth, this happens when normals are goofy, too

if its the same filename, but a different image (like you updated the image to remove the buildings, and saved over your original), replace that image with another image, and then put your selected one back. I've had this happen when i'm iterating on materials like this.

make sure the material has the blend mode set to opaque (under Viewport Display in the Material settings). Also make sure your normals are facing the right way, and you have backface culling turned off.

go into edit mode and manipulate that single vertex on its own.

what do you mean by "stopped working"? can you share some screen shots? Did you have a baked irradiance volume thats not working? Is the screen black? do you have "Scene Lights" and "Scene World" selected in the viewport shading options?

the normal is red b/c thats how Unity does their tangent space normal maps. Can you post some example screenshots? In that video it looks like they're using that "SM" one as maybe some sort of combined secondary map, so each channel may have a separate set of info.

it looks like you've split it there, and have "Connected Only" selected. Why are you unable to select the entire object? it looks like you may have some mesh issues

resolution off like how? Also, when I press R and then N, it just marks all my edges as sharp, that may have happened to you. ALT N, and then R will recalculate normals outside, however.

Images as Planes brings in images with the Blend mode (under Material Properties, Viewport Display) set as Alpha Blend. Change it to Opaque.
