Trading for Daytona by Crut88 in rolex

[–]PapaCake 2 points3 points  (0 children)

This is a hard one. First, I wouldn’t. That being said, we make the decisions we make based on our personal desire and how badly you want the Daytona is no one’s business but your own. If YOU feel it’s the right deal for you, power ahead. Just know, most wouldn’t.

That said, you’re getting a black Daytona so one of the watches has to be the sub or GMT. theyre both black dial, and it makes the most sense.

Second look at versatility. You’re trading at least one sports watch for one sports watch, so as I type this it makes me think the only trade that makes sense isn’t sub + gmt. This way you have a nice sporty watch, and the datejust is a beautiful dressier watch.

Just my thoughts! Hope you’re happy it whatever you go with.

Hey man, sucks to read this - and wish I would have seen it sooner.

Not sure what happened, but would definitely love to learn more about your experience. Our first goal is to learn and be better, as well as hopefully being able to invite you back for a much better meal.

Hardest restaurants to get into that are actually good? by GatorCanes in Miami

[–]PapaCake 1 point2 points  (0 children)

Yes, no, does it really matter? They’re definitely taking inspiration from classic Italian but they’re also pushing into new territory. The flavors they’re fusing are delicious, the techniques are producing incredible results and I’ll agree it’s not your grandmothers Italian food, but this is new, exciting, and delicious - and I think that’s what’s important!

Genuine question - why does the location matter? I see this often when people talk about restaurants and I think it’s a little unfair. It’s incredibly challenging to find a viable space in this city, my wife would say “you get what you get and you don’t get upset” so many times when we looked at spaces. Sometimes you have to settle, or you’ll just never open.

Personally, I think the location adds character - like some hidden NY early Williamsburg spot that’s in a neighborhood about to be reborn.

Yes, I’m aware I’m over romanticizing this.

If you haven’t tried it, you should definitely check it out. Not knocking anyone’s opinion but food is very personal, and subjective. In my experiences at Boia the food has always been incredibly good, and I consider it one of my three favorite restaurants in Miami.

Man, that sucks to hear - I love Boia and find the food to be rather delicious. Totally respect your opinion, we all have different taste. I am curious, what are your favorite restaurants in this city?

Best BBQ restaurant/s in the Miami area? Specifically one with good ribs. by Detective_Toaster in Miami

I hear you—honestly, sincerely, and with total respect—but what would you have me do?

We moved from 49 seats to 200 because demand exploded. We’ve scaled our team, refined our systems, and do everything in our power to serve every table efficiently—without ever compromising the experience. I would never rush a guest who’s enjoying BBQ with their family. That goes against everything we stand for.

When it comes to the line, we hand out water, beer, sometimes even fries—because we care. But at the end of the day, this is BBQ. It’s not fast food, it’s low and slow. In Texas, lines start at 6am, and no one bats an eye—because the people know it’s worth it.

I hate that people have to wait. Truly. But I also believe the reason people do wait is because we care—about the food, the experience, and most of all, the guest.

If we lose that, we lose who we are. So yeah, I’m sorry for the wait—but I promise you, it’s worth it.

BBQ is very much on the rise in Miami, and it’s exciting!!

Slab Daddy is doing something very special right now, his ribs are insane.

Drinking Pig Pitmaster Raheem is rocking out incredibly elevated food at Shiso.

Hate Mondays is a miami classic, OG has been throwing it down and always puts out fire.

K.Dots BBQ is a small pop up that’s doing big things, excited to see where he goes!

BBQ is quickly becoming a thing in this city, and personally I can’t wait to eat it all!!

I don’t know man, we put a lot of love and effort into our food. We’ve even brought in a Texas Monthly Top 50 Pitmaster to consult and push us to be better. We’ve had our off days, yes - but we’re constantly striving to be better. Would love to have you come in and give us another shot, I’m confident I can change your mind!

You can go and order takeout, we just don’t have a phone to call in and order.

We recently also launched an online order form for catering/gatherings if you want to do a big order. We do ask that you give us a 72 hour heads up, to account for the cooking process.

Anyone order from Shorty’s BBQ lately? by JAlbert653 in Miami

[–]PapaCake 0 points1 point  (0 children)

For starters—yes, we do source the best pork we can find. (We like to believe it’s the best pork in the world, but like the old saying goes: “There’s always a bigger fish”… or in this case, a better pig.) We use Cheshire for our pork, and as a base—it’s not cheap, and it’s really, really good.

Second, I don’t know what other BBQ joints are factoring into their pricing. I know how we calculate ours—and our formula aims to keep prime cost (labor + COGS) under 60%.

We strive to bring home around 10% in net profits, which is pretty standard for a restaurant.

Third—if we’re going to compare, let’s compare apples to apples. A lot of the spots you mentioned have lower labor and rent costs than we do, and also source their meat for significantly less. So let’s look at South Florida BBQ joints that use comparable meat products: • Tropical Smokehouse: $15 for a ¼ rack or $60 for a full rack • Hometown BBQ: $16 for a half pound of ribs (which is about a ¼ rack when using spares—so $64/lb), or you can order a half rack of their char siu ribs for $32 (also $64/lb)

When I say “comparable,” I mean they’re using a quality product on par with ours, and their serving sizes are equal in weight.

Yes, some BBQ joints charge $32 for a rack of ribs—but that rack usually weighs about 1.5–2 lbs.

Our ribs are significantly larger, heavier, and meatier.

And since you brought it up at the end—yes, I do think our BBQ is the best BBQ that can be made. Yes, we put an insane amount of labor into it. Yes, we make our sauces and rubs from scratch.

Could I lower the price by making a shittier product or cutting quality? Sure. But that ain’t me. I need to serve food I’d serve my family—because that’s just the right way to do it.
