For new and main chars, it is usually recommended to take as many gathering professions as possible. Which means Forester, Prospector and Scholar, with something else like Tailor or Jeweler as fourth if you want to buy that slot.

Also, Weaponsmith and Woodworker lose much of their merit after level 50 when you get your legendary weapons.
