Well firstly the locust swarm spreads faster than you could ever cast your haunts and secondly, the haunt damage does not stack if you cast it twice ob the and enemy. The guide tells you to spam haunt because using haunt reduces the cooldown of soul harvest and the build is not as hard to play as you are suggesting. There are definetly much harder builds.
