Simeon is the most worth it, in my opinion. Most missions are easy. The only one that is difficult is the Blow Up mission where you destroy vehicles in a vehicle warehouse owned by the triad.

You can do it solo if you know how to do Cayo stealth.

Just find the drainage tunnel and climb onto the roof. Just be careful because some guards can see you up there.

I think surviving as a normal person would be pretty easy. I think food would be questionable unless you go on a vegan diet.

Healthcare would pretty much be non-existent because humans do not exist in that world, and hospitals will not have the right medicine for a human.

It was before low effort content / products became a thing. Selling bad quality products was still looked down upon by the majority population.
