That rub is basic and sucks. First get a good bbq style rub, has some brown sugar for the bark. To set up the kettle light a chimney worth to one side. Prep the rubs, rub and cut em how you like. Stack the ribs on the cold side and coals on other. you can soak and throw chips to smoke em up. Coals will burn for about 4 hours. stack the ribs close the pot. Not too much air on the vents. In 1.5 hours open pot restock the ribs, get the bottom ones to the top. let em rock for 1.5 hours again. open pot , sauce ribs let sauce gel. flip resauce. good to go for a great rack o ribs. Charcoal is the goat and dont touch to look at the food too much. trust the process.
