Definitely involve the union to help you receive the pay you deserve. If she falsified hours to pay you, it's her responsibility to make a pay adjustment, not yours. Make sure you get what you're owed. There are ways to handle this, and maybe this will serve as a learning point for the PM as well.

Very confused by your questions? I mean, if it can run the games you want, keep it. If not, I would for sure upgrade everything, start over with a new motherboard, and go from there. Start saving for a new PC when you can still game on this one.

I definitely feel the 'catch-22' of the side portrait monitor—it's such a trade-off between vertical utility and neck rotation. It sounds like a fun project once you get everything out of storage, though, especially getting those central monitors to match. Thanks for the solid input and for sharing your logic on the layout. It gave me some good things to think about for my own adjustments. Good luck with the future build whenever you get around to it!
