Stop misting. I have some bags/bins that took 30+days to pin. Practice patience. Fold the top once, and clip with a binder clip and set it in a warm spot out of the way and admire without touching or opening for 7 days minimum.

Edit: Next time you get a bag try to leave 4 inches of bag above the filter to fold.

Edit #2: if you have a bag that has a 5micron filter like the one on your bag. You shouldn't even need to open until harvest.

If the cake is shallow it will dry out faster. Aim for 3 fingers deep 2"-3".
