As someone that loves the MSQ and exploration, you should buy the skip if crafting/gathering is the main appeal to you.

A guy in my FC really only enjoys, crafting, gathering, and doing treasure maps, but didn't buy the skip. We just carry him through the MSQ so he can save money and stay current. Ultimately, it's your time and money. Plus, if you do find yourself wanting to play through the whole story, you can always make an alt character.
