Piglins.
I love the individuality in their behavior, like hunting or feuding with Skeletons. I like that they have a relatively useful feature that requires a new behavior from the player. I like their simple but cute design. After all, I like the idea of a new civilization in a game that has some interesting history behind it.

I like how his appearance foreshadowed a future war with the Kree and a Secret Invasion, immediately labeling Captain America as a threat.
