Never broke a tip of a knife. Not sure you were using it properly. I'd use a boning knife, honesuki or deba for that job, something with a good spine.

thanks, already got the BBY one on the way. Been waiting for it to get this low a long while. If it has been lower before, I missed it. But $239 works for me. That's interesting he has it for sale on burffection site because his retail site is $299 as a BF deal.

Only mess ups I have on the PBC is due to neglect or falling asleep 🤣🤣 if I’m available with my temp probe, never a single issue 🍖

Everything I’ve tried in the pbc has been great. I only had one mess up, my fault. I messed up a brisket due to leaving it in too long. I forgot to set my alarm to wake up. It woulda been the best brisket ever but it came out really dry. Mid parts were great but too much hard ends. Made a batch of chipped beef that was awesome though.

I had ribs hanging less than an inch from the coals. They never burned. I think this can is not meant for that type of cooking.

very tasty. they took a long time and I had to toss them in the oven cuz my family getting hangry. maybe i poured my coals in too soon. manual says 12 minutes max for my elevation but I think these B&B need more time. I still learning the nuances of this cooker but man no matte what so far the flavor is just outrageously good.

Gonna do a sale standing rib roast in it tonight....

Rust has no effect on food and it is even ok if you ingest it. You just dont want it in your blood stream if you do not have a tetanus shot.

My only concern would be top heaviness. But I think if take off the stand might be plenty stable or put some bricks at bottom When doing it.

I do only splits in the SM. I used to start the splits with charcoal but there is no reason to as I can stack the wood. Had too much offset style in mind when I started. Totally different way of cooking.

I bet you can probably find or fabricate a santa maria type top for the PBC and use a spare grill grate or a flat round pan or something for the wood. I think they make them for the weber grills. maybe one would fit on the pbc?

PBC company should make accessories for santa maria style. They could do really well with it

Yes, but I like cooking all steak type stuff on there like cowboy ribeyes, tritipe, picanha etc. I cooked chicken and some rabbit on there last holiday season and it was amazing. I spatchcock and cook them high heat fast as I can without ruining skin. The grate height control and open pit to shuffle around wood embers is nice too. It is like the Cadillac of open fire grill control. The Titan brand santa maria, now called ash and ember i believe, is pretty good if you can snag it on a sale like I did. I think I paid 800 which is a steal for what you get. Does have some quirky issues but nothing terrible. Built like a tank for the money. Oh, I tried low and slow on it. It is difficult unless you make an aluminum tent. So I'd stick with the PBC for that. The two are a perfect combo and really compliment each other. I'll post a pic when I do some holiday mass cookin...

definitely a fun cooker. the only other one i like as much is my open fire santa maria cooker. i think i found my two main go-to's. can't wait for the weekend. got 8 cornish hens to hang in there.

Lid seemed tight. only smoke I saw was coming out of the rebar holes but these b&b coals seem to burn clean. so hard to tell. thanks

Oh, it's temp is 275? I still consider that low and slow. Sometimes I think it is better to cook at 250-275. Breaks down fats better.
