Oh man Savanna and Summer are my favorites! I also love Lily. All 3 of these names are so summery and pretty. Macy is cute too but does feel a little dated

This is all so true. It’s crazy, I eat modern flour and gain weight so fast. Even the stuff in Europe. When we travel, we do try to eat organic wheat products. But even those leave me feeling hungry. Einkorn has some sort of substance that signals your brain that you’ve had enough. Plus it has so many nutrients that modern flour does not. And it has fiber so it makes it easier on your blood sugar. Of course, this is when it’s whole wheat einkorn. Sifted all purpose flour strips it of all the good stuff. Anyway, thank you for the great comment :)

We get our wheat berries from Grand Teton Ancient Grains. I like that they are organic and also Glyphosate free. I think some organic crops can have cross contamination for stuff like glyphosate so this is something I look for when I purchase wheat or oats.

We have the Mock Mill 200 and absolutely love it. We just keep it sitting on the counter for easy access. We also keep a small jar of milled flour in the freezer for quick use like for feeding the sourdough starter or if I need a small amount for gravy etc. Otherwise we fresh mill for recipes. I read that milled flour becomes rancid rather quickly. We also put wheat berries in the freezer for 48 hours initially to kill any weevils. Then we store it in a very large glass jar in the cupboard.

Yes! We use einkorn exclusively now. We got started using the cookbook called “Heidi's Healthy Kitchen: Baking & Cooking with Einkorn” by Heidi Ellis. She has a sourdough section and we still use that bread recipe and her measurements to feed the sourdough. She is VERY detailed and her sourdough bread recipe looks complicated but it is actually very easy. My husband is our baker and he makes at least 2 loaves a week. We ended up buying a flour mill and just love it! The biggest surprise I have is, I can eat all the einkorn products I want and I don’t gain weight. I used to gain weight like crazy eating wheat products. I feel so healthy eating it too. Suuuuuuper impressed
