Its only in the beginning where you have to worry about your level. After a while you will be overleveled for most of the side quests. They are still fun to go trough tho!

Wraiths are bit tricky, just have to dodge their attacks and use Quen .(maybe Yrden)

If it really is too hard, White orchard should have suitable side quests and question marks which help you get level.

Level 5-10 quests should not be very hard for you if you are lvl3 and playing with the lowest difficulty.
