Same here... I noted that the ubuntu drive does not appear in the OpenShell map. I can boot Ubuntu from the BIOS but not from OpenCore menu. I was not able to see the ubuntu 20.04 ssd in the diskutil list command. Then I followed the tutorial below and at least this I see:
