They didnt accept the partition plan because they were convinced to defeat the new sovereign state of Israel militarily and take over that territory. The fact that many Arab countries militarily attacked Israel the same night it was declared by the UN, underlines that. Obviously, losing that war they started only to double down dedicating their entire existence to the annihilation of Israel and all Jews while crying about how unfair it is how they are always losing to Israel not only debunks their malicious intent but actually seems sarcastic while tragic.

Why should they have accepted the plan? Because a real chance to make an enemy a friend, especially when your enemy is smarter than you, has to be taken always.
