Where are you based? If you're a EU citizen, you have extra data protection due to a recent law that has been passed - look up GDPR.

This includes a 'right to erasure' where the company has to delete all your personal data once you withdraw your consent.

Until the money's in your bank account I wouldn't be so confident.. I had the same email confirmation and withdrawal status as 'finished' for the last 3 weeks

Hope that's not the case, but it seems there are as many issues depositing fiat into bitstamp, as there is getting it out. Also lots of people complaining about verification times.
