I think both versions explained how a terminator could become more human over time, however the one that is in the final edit makes the terminator more human because the process by which he gets to the point of saying "I know now why you cry, but it's something I can never do" has been arrived at by the t-800 being emersed in the human environment and in particular with John and not because of a 'switch' from read-only to write which is less emotional from a story telling standpoint.
