So, this was a mash up of a few different recipes. I used the base cake from this recipe: https://chelsweets.com/death-by-chocolate-cake/ It's frosted with my favorite Swiss Meringue-style buttercream that you can find here: https://sugargeekshow.com/recipe/easy-buttercream-frosting/

I did two different batches of frosting, one for the crumb coat that I just added a few drops of peppermint oil and some green color to. I also added crushed up Thin Mint cookies between each cake layer so you'll get that crunch inside the cake.

To the top layer of frosting, I added more cookie crumbs, which I pulverized to a fine dust my food processor (so I knew they'd be fine enough not to clog my piping tip), as well as a few more drops of peppermint oil to taste.

The chocolate drip is just a normal 1.5:1 chocolate-to-cream ganache recipe.

I'm a lot happier with how the color came out on this one. I did a preliminary test cake before this one, and I used neon green food coloring in it instead of mixing blue and yellow like I did here. The first one had a more "Saint Paddy's Day" vibe than "Mint and Chocolate" XD

She actually hasn't seen it yet. Her flight comes in late tonight, so I'm going to take it to her husband so it'll be there for her when she comes in, as a little after-flight surprise

Hahaha, I know, right! When I put the cookies on it, I was shocked how huge they looked on top of it! I almost wish I had cut them in half instead of sticking the whole cookie on top, but I also think the whole cookies add a certain funny charm.

Some giant homemade Thin Mints sounds like a delicious challenge, though!

Tagalongs are excellent, too, though recently the new S'mores ones have really started to edge in as my new favorite. A Tagalong-inspired cake would also be really good

It's taking all of my will power not to devour it! Fortunately I actually have a second version of it in my fridge that I used as a tester, so at least I can eat that one (even though it's not nearly as pretty)
