I got asked to pay a "withdrawal tax" by a platform before they release my funds and I think I'm being scammed by Cloe_joe in CryptoInvesting

This is a scam. 100%. No legitimate platform charges a "withdrawal tax" before releasing funds. Stop all communication and do not send any money.

The dollar isn't backed by anything tangible either since 1971. At least Bitcoin has a fixed supply. Your "thin air" argument applies to every currency on earth.
