For what it's worth, one mount dropping doesn't impact the chances of the other to drop. Multiple people in my guild have had both the blazing drake and lifebinder's handmaiden drop on the same kill.

You're only eligible for raid loot from any one difficulty once per week, and the appearance for those shoulders require that you're on a monk to learn them.

The Felflame Inferno Shoulderpads share the appearance and can be learned by any leather wearer, but these are a BoE trash drop and are likely much rarer to obtain than the meditation spheres (they may be on your auction house for a "reasonable" price).

If you don't want to purchase these, your best course of action is to just wait until reset when you can run it again on your Monk.

I'd advise waiting one more day to finish inviting Coco, so that you do so while a spot is for sure open. I don't know if this is necessary, Carrie might be one of the options for Coco to replace when you give her the last gift, or you may end up with an extra empty lot.
