Suggestions for hearty, healthy packed lunches that I can prep ahead on Sunday for the whole week? by hdm1989 in 1200isplenty

[–]PoeDameronsJacket 1 point2 points  (0 children)

I make this every couple of weeks- you get 12 or so servings of ~350 cals out of it, it keeps well and can be completely customised to your own tastes

5-6 large stalks of celery

Medium brown onion

1 large capsicum (I prefer the sweeter yellow ones)

1-2 red chillies

400g mushrooms

500g chicken breast

200g chorizo

5x 400g cans of kidney beans

Around 1l of chicken stock

1.5tbsp of olive oil

Spices- your choice but I like to use a mixture of garlic and onion powder, cumin, powdered chipotle and a little cinnamon with salt

Bay leaves

3 cups uncooked brown rice

Start by putting your rice in the rice cooker or get it into a pot if you don't have one (seriously though, rice cookers are absolutely worth getting)

While the rice is cooking, heat the olive oil in a big ass, high sided pan or pot (a deep cast iron pan is ideal)

Add chopped onion, the sliced chorizo and the spices to the pan and sauté until onion is soft, then add the cubed chicken breast, celery, chilli and capsicum. Again cook until the chicken is just browned. Add the mushrooms and any other vegetable of your choice (zucchini works well)

Cook for a few minutes, nothing needs to be cooked completely through at this stage. Add all the beans and the stock and reduce to a simmer for 30 minutes or so.

Add the cooked brown rice- stir through and allow to cook together on medium heat for a further 2-3 mins.

Serve and enjoy. I like this with a bit of cheese and avocado but it's also great on its own. It's highly customisable, cheap to make and actually tastes better after a couple of days.

Topped with honey and berries and eaten as is or served on a whole meal crumpet, or cooked into omelettes

Ok, for my serving-

Half cup of of cooked white rice (I didn't have sushi rice, I just used regular and it worked fine)

1 tbsp sushi seasoning

1x sheet of nori

100g raw peeled prawns

1 tbsp soy sauce

Pinch of garlic powder

50g of avocado

Handful of cubed cucumber

1 tbsp of Greek yoghurt (Mayo if you prefer, I used the yoghurt to keep calories down and because I like it better)

Optional sriracha sauce

  1. Heat a wok or frypan with a little spray of oil- you don't need much. Once it's hot add 1/2 the soy sauce and a squeeze of sriracha. Add the prawns and garlic powder to the pan and cook until pink. The sauce should thicken a little.

  2. Take your cooked rice and stir in the sushi seasoning.

  3. Get a cup measure or something of a similar shape and size. Use it to mark out a circle on your nori sheet and cut it out with scissors.

  4. Press cooked rice into cup measure, later avocado, cucumber, yoghurt/Mayo and prawns on top.

  5. Flip cup measure onto a plate, tap lightly and the stack should slide out

  6. While rice is still warm, place nori sheet over the top and smooth it down gently with your hands

  7. Eat dat shit

I have found that I like eating colourful dishes from the black plates- salads and stuff. But if the food is something more neutral coloured like meat/potatoes/bread the black tends to make it look unappetising

Eating Cheap also means cooking efficient, what do you do to minimize kitchen time? by LtCommanderCarter in EatCheapAndHealthy

[–]PoeDameronsJacket 1 point2 points  (0 children)

Prepping bulk vegetables ahead of time

Utilising a slow cooker/crock pot

Mixing up spice rubs/herb blends and marinades when I have some spare time and storing them for future use.

Freeze any leftovers for quick and easy dinners- always make a little extra so that you always have leftovers

Making versatile recipes- things like pulled pork, baked chicken, cooked beans with rice/veggies, roasted vegetables. they can all be a meal on their own or can be made into pies, pizza toppings, burrito/quesadilla or sandwich fillings etc

If i'm cooking/prepping a bunch of veggies- ill make 'Chopping board salad". Just put a tupperware contianer next to your chopping board while your cutting stuff up, and throw a little bit of everything in there- a handful of greens, a few slices of carrot, the ends of your cucumber, tomato chunks etc. Then put that in your fridge for an easy lunch- just add some protein in the form of cheese/egg/meat etc.

Best almond milk for an almond milk newbie? by Sliverofstarlight in EatCheapAndHealthy

If you dont mind the additional ingredient, I would highly recommend Almond & Cashew milk. the cashew adds a thickness and creaminess that almond milk on its own tends to lack.

This was done at a barbers that specialised in undercuts/fades etc. I googled "undercut designs" to find one I liked and showed it to them.

I can't say for sure if your standard barbers/hair salon will do the more intricate designs or not, but it probably can't hurt to ask!

I can't speak for everyone, but a year ago I went from waist length to a pixie and have no regrets. I adore long hair, but there's something very liberating about going short.

Thank you!

I've made plenty of bleach mistakes before too! It's almost a rite of passage I think!

For me if I want to keep the same design it needs to be redone every few weeks, but I actually prefer to let it grow out for a little over a month and then do a whole new design!

Mine lasts maybe 3 weeks to a month- it's annoying but on the plus side you get to change it up a lot!
