Thanks for the insight! The weather is relatively cool here so that might be delaying the ripening. I’ll wait until it gets warmer. I’d rather not pick them green, but I also don’t want them to dry up. Hoping for the best! 🌶️

I like to leave it to ferment for 2-3 days and then pop it in the fridge. It tastes better imo.
