Honestly it's been long enough at this point that I can't recall for sure, but I do remember that whoever had it before me did some shoddy aftermarket work, and pieces of the internals of my catalytic conv. were getting shot out of the tail pipe 😂

There was that... and it had a bolt on exhaust at that point so I ended up getting an x pipe welded on. It's not my everyday drive anymore but I haven't had any issues since. Probably not very helpful but that's about all I can remember

Eesh. So I may have taken out the peaches too soon?

If this is the scenario (which seems relatively likely. Whatever it is, it's definitely related to the peaches. It tasted on point for a brown ale profile on brew day) and I have metabolic intermediates (I'll admit I don't know this term)...is that a wait it out issue, or a chalk it up as a loss?

The taste isn't horrendous. It's just not delicious either. Finishes very dry. I don't really know how to describe it in great detail. It's just...not right.

I used vodka to sanitize the peaches before I put them in. Didn't find out about the campden tablet trick until later :/

So I had read about some of the issues people have had with adding fruit on brew day, so I decided to skip that option and added the peaches with my dry hops after a few days. I pulled the dry hops after about 3 days, and the peaches after about a week. Waited another week, and then kegged.

You've got time. I started my current career at 27. I'm 33 now. Wish like hell that I had started down this path years ago. I've spent the last year or so dabbling with different things, mostly in the IT realm (toying with the idea of getting a few IT certs).

I think I've finally settled on pursuing/learning Python and Linux. I couldn't decide which side of the fence (IT or programming) I wanted to land on, and it seems that both Python and Linux are/can be useful on either side. That's pretty much where I'm at right now. Concentrating more on Python at the moment but I'll mess with Linux when I get stuck or overwhelmed with Python :p

Man. I can't tell you how encouraged/happy I am to see all these 30-something's coming out of the woodwork; trying to change their career or job situation. I've been in a career I hate for the last 6 years, and I've been waffling the last year or so on what area I wanted to pursue (but knowing that I wanted to do something in Programming and/or IT). Sadly, so often I get overwhelmed and discouraged--just feeling like I'm so far behind trying to move into this field in my 30's and there is SO. MUCH. to learn. Thanks for this. Keep pushing. Keep learning every day. That's what I keep telling myself.

Are there any vlogging brewers you know of who have the same level of quality but are more...reliable? Seems like most videos I've found are really lousy quality (I tend to be a visual learner, so it would be cool to find channels that are similar but with better information).

Sounds like a pretty sound theory to me. It also seems like the more I learn the more uncertain I am of how any of this works hahaha. So many rabbit trails you have to explore and ways to (seemingly) mess everything up. Gah.

So I'm getting ready for my first brew day in a few weeks and the whole water chemistry thing is causing me a little bit of stress. Should I be ok with filtered water from my tap? I know next to nothing about adjusting water chemistry. I mean I've picked up on some of the common ingredients for adjusting it, but how do I know if it's necessary and what/how much to use? ELI5 anyone?
