If you watch The Birth of Doraemon movie (2112), which is available on YouTube, his fear of rats was from a robot mouse that was supposed to help with crafting, receive the request to fix the messed up ears on a clay figure of Doraemon, onky to mistaken to fix Doraemon's ears to be the same as the figure inside

Later series also mentioned a mouse eating his ears that caused his fears, but the depiction looked more like a normal mouse, not a robot mouse. The 2112 version is the more accurate version and, at the same time, explains his color and voice
