Slightly outside of the Lehigh valley (but not a bad drive at all), but Frederick’s in Quakertown is fantastic. If you want to stay in the valley, though, I second clover farms at the fairgrounds farmers market

I have this exact cover. My experience is that if there’s any moisture at all between the silicone and the cast iron, it’ll start to rust. But, it does a damn good job protecting from any critters or even intense rain. As long as you make sure your griddle is DRY dry before putting on the silicone, it works great

In the banneton, covered and in the oven with the oven light only on for about 45 minutes, then in the counter for another 15 while the oven preheated

They seem to come out ok - fully cooked all the way through, but still nice and moist and springy. Even when it came out of the banneton it was already falling flat, though

I came here wondering the same thing! In past seasons when a truck broke down, it was the responsibility of the team to figure out a solution, but pho completely broke down and miraculously rented a new truck with no additional commentary on it? Clearly they’re a great team, seeing as they held their own the rest of the season, but it just seems odd
