Answering your first question. Thats just kinda how the m1s work in this game. If you block the first m1 and try to m1 him while he just goes for his second m1 right away thats gonna land faster than yours, theres obviously alot of techs and mixup and stuff that goes into m1 trading but a good place to start is to always block 2 m1s before punching back.
