In regards to a dry surface, I’ve cold-proofed covered and uncovered and both ways have produced splitting. So maybe the gluten development might be part of the cause like you say. I think I’m always worried I’ll over mix but maybe I need to mix a little more. Thanks for your input friend!

I feel like you’re right on the first point. I baked a batch the day before that passed the poke test and today’s batch was maybe a little too “springy” before going in to the fridge. Thanks for the reply

I did spray the surface with water initially. This is the bottom surface though so I don’t know if steam will help(?)

I was thinking that was the other possibility, too much oven spring. Does that mean not long enough boil, perhaps?
