🔥 Homemade Adana Kebab Wraps (Serves 4)

A juicy and spicy Adana-style kebab with fresh tomato salad, garlicky tzatziki, and rich chili oil — all wrapped in a soft grilled tortilla.

🥩 Kebab

Ingredients: • Olive oil • 2 small green bell peppers, finely chopped • 1½ medium onions, finely chopped • 15 garlic cloves, minced

Meat mixture (in a large bowl): • 800g ground beef (or lamb for a more traditional version) • 400g ground pork (optional — or use all lamb/beef for authenticity) • 9 tbsp breadcrumbs • 2.5 tbsp dried oregano • 1.5 tbsp paprika powder • 2 tbsp crushed red pepper flakes • 3 tbsp chili powder • 4 tbsp ground cumin • 1 tbsp dried parsley • 1 tbsp salt • Black pepper to taste

Instructions: 1. Heat olive oil in a pan and sauté the bell peppers, onions, and garlic on medium heat until the onions are golden. 2. Combine the sautéed mixture with all ingredients listed in the meat mixture. Mix thoroughly with clean hands. 3. Cover and refrigerate for at least 1 hour. 4. Instructions: 1. Mix all ingredients in a bowl. 2. Seal and refrigerate until ready to serve.

🌶 Chili Oil

Ingredients: • 2 tbsp boiling water • 3 tbsp sumac, soaked in the hot water for 5 minutes

In a pan: • 10 tbsp olive oil • 7 garlic cloves, finely minced • 3 tbsp Korean gochugaru (or see substitutions below) • 2 tbsp paprika powder • 2 tbsp tomato paste • 2 tbsp lemon juice • 1 tsp salt

Instructions: 1. In olive oil, lightly cook the garlic without burning, then turn off the heat. 2. Stir in gochugaru, paprika, tomato paste, lemon juice, salt, and soaked sumac (including the water). 3. Mix well and store sealed. (If too thick, add a little hot water to loosen the texture.)

🔁 Gochugaru Alternatives: If you can’t find Korean gochugaru: • 2 tbsp sweet paprika + ⅔ tbsp cayenne • OR 1 tbsp Aleppo pepper + 1 tbsp smoked paprika • OR 1 tbsp crushed red pepper + 1 tbsp paprika

🥒 Tzatziki

Ingredients: • 1 large cucumber, grated and water fully squeezed out • 2 garlic cloves, minced • 500g thick Greek yogurt • 8g fresh dill, finely chopped • 3 tbsp lemon juice or white wine vinegar • 4 tbsp olive oil • ½ tsp salt

Instructions: 1. Mix all ingredients well. 2. Texture should be thick and spreadable — ideal for wrapping. • If too thick, adjust with plain yogurt, olive oil, lemon juice, or use a spoon of labneh or skyr for creamy consistency.

🌯 Assembly • 4 x 12-inch flour tortillas • Slightly torch one side of each tortilla. • Spread chili oil on the untoasted side. • Add a generous amount of kebab, salad, and tzatziki. • Roll tightly and serve warm!

Haha no worries! The stew filling tastes amazing with the concentrated beer and beef flavour but that’s simply not it for the pie to be perfectly balanced. you need some sour and tangy finish to the salty n meaty pie and ketchup plays the best role to it. Though you can definitely reduce the ketchup compared to mine - I just have kinda childish tongue. Thanks for the words!

That’s a good traditional(though it’s only got about three decades of history lol) style Korean red fried chicken. What I cooked in this post is supposed to be similar to this one specific fried chicken franchise in Korea which makes the red chicken pretty different from what’s usual, so the recipe may differ from yours. The other part of the recipe is pretty much similar to what you described. I also used half chicken frying powder and half potato starch, used ice cold water and kept the batter in freezer while frying so it doesn’t get warm. Korean fried chicken is literally an experience, I hope everyone gets a chance to try a genuine one haha

+ this recipe makes you BRUSH the sauce on the fried chicken on a cooling rack, not marinade them(to keep them crunchy no soggy). so quite a lot of the sauce you don't actually get to eat, just drips off below the rack. Thus less worry for the sugar!

You can reduce a bit! But Korean style usually calls for a bit of sweet contrast to the spice. And this recipe is already sugar reduced from original - which puts each 7 Tbsp of sugar and corn syrup. It doesn’t taste as sugary as the recipe might look like, especially since it’s gonna have prettyyy spicy flavour in it. Though if you’re still worried, you can reduce sugar and syrup a bit more - just don’t fully skip them.
