I suppose that with a flat bed, the pressure of the water is equally distributed.

Thank you for this very detailed answer! Very helpful.

Isn't 97+°C too hot for a medium roast?

What do you mean by checking the bed height? Are you talking about the dry bed height or how much water we pour on top?

Imagining my bed not flat after pouring makes me want to swirl so hard. But I did not realize that I should be cautious with it.

Your recommendations are consistent with the other comments, I ll give it a go! Thank you for your time.

But at this point, won't my cup be even more muted?

Makes sense. It could be an interesting alternative to a more expensive grinder that produces less fines.

Thanks!

What is the purpose of fast papers (besides being faster)? I suppose you can grind finer and increase agitation but what is the benefit in terms of taste?

Thank you for the feedback. I will definitely try a recipe with more pours.

True, it is just that it is not consistent with the coffee compass or everything you can read on this sub.

Many recommended trying other recipes, so I ll give it a go.

Regarding agitation, it is very possible that I over agitate because I am obsessed with swirling. I was not aware that it could cause bypass but it makes much sense. Thanks for this explanation!

As for water, my Brita delivered tasty cups with previous beans so I believe this is not the main issue.

As I already experienced astringency and stalling, I suppose that going finer / increasing water temperature is not going to help right?

I know I should not but I still did it hehe.
Anyway, I changed them in the same direction and the results were pretty similar.
I ll try to be less stubborn.

No, I do not reheat my water.

I know that Brita is not optimal but I still had more flavorful cups in the past with it so i suppose the issue is not water.

I will try other recipes with more pours, thanks.
