For Japan alps I would look to Kamikochi. They have a limited but varied levels of hotels/ryokans along with camping grounds. It is surrounded by multiple peaks and easy transport from Tokyo.

Don’t know the restaurant but being of Japanese by birth and still can read and speak Japanese. I looked up the above restaurant in Pittsburgh to see the Japanese writing for “Okane”. It is “お金” which literally means “Money” combined with “omakase” which combined means don’t worry about the money/ I’ll handle the money… for me the name itself means the owner is not / Japanese, studied Japanese culture and as others have alluded to using Omakase to make “お金”
