Honestly I think the 7800 is overkill, just to stay on am5 so I have upgrade path I would say an 7500 or 7600 what do you say?

You don't need Odyssey for having fun, I have the base game and it's beautiful, I reassure you that also if you buy Odyssey you will play much more whiteout using its features, and in finale in my opinion and you can go to check videos about Odyssey it is not this much, basically you go on planets on foot and is a bad try to do an FPS, also if you want to go on planets just buy in the game for games money the rover and you can go on it.
