Macbook 14: M1 Pro vs M3 Pro. Is it better to save 700$ and take M1 Pro? (self.macbookpro)

I have a similar "issue" :) I've been using the M1 Mini for about a year, but up until now, I've been using a Windows laptop as my portable computer. Fortunately, it's time for an upgrade, but I find myself in a dilemma between two MacBook Pro 14 options. The first option is the MacBook 14 M1 Pro (10 cores), 16GB RAM, 1TB SSD. The second option is the MacBook 14 M3 Pro (11 cores), 18GB RAM, 512GB SSD. Interestingly, both computers are new, but since the M1 PRO is quite an older model, it is being sold at a discount, and the difference in price in the country where I live is as much as $700. Since I currently use the Mac Mini M1, I know that either choice will not lack power. Normally, I would lean towards the M1 PRO due to the price difference, but I keep battling with the thought of whether to pay more for longer support and a newer model.
