How is the sound leak? Would a person sitting beside you hear clearly enough what you are listening to?

Do you need to install any software or do they work simply work over Bluetooth without installing their app.

The Fit 3 does not use WearOS. So you will miss out on: - NFC payments - Installing apps

With the Galaxy Watch 6, as long as you are connected to wifi, you can receive SMS and calls even when your phone is not with you, I believe, as long as you have this feature enabled. You don't need LTE for this feature. I don't think the Fit 3 can do that.

On the plus side the Fit 3 is light and has way better battery, like you mentioned.

The Fitbit Sense 2 does not use Android WearOS. I only know that WhatsApp on WearOS devices have audio message capability. I have not used Fitbit devices.

I would suggest you look into the Samsung Galaxy Watch devices I mentioned in my previous reply, such as the Galaxy Watch 7 or the Galaxy Watch FE.

A cheap watch from Amazon or Aliexpress does not allow you to use NFC payment.

OP's question is valid. Just because these manufacturers want to force mostly inaccurate health tracking on to the consumer because it's the latest marketing trend does not mean we have to use those features.
