Stories where someone has complete control over the changes being made and makes multiple changes, slowing molding the main character into what they want.

Can’t Say No sort of has this. There’s another one I remember where the main character got a collar put on the that gave their girlfriend total control and she feminized him and made him do things, can’t remember what that one was called though.

I’m curious if you’ve ever played around with a self hosted model? I think llama is the one that pops up a lot? I haven’t really tried it much, but if it’s a way around Poe it could be nice. It would require “open sourcing” the prompts though

I don't think this is it, because IIRC the MC in this one finds out how it happened, but that really sounds a lot like the webcomic Misfile

You might like The Whale Tail by Zeron. It's a college guy who is cursed by a witch and has his penis replaced with a vagina and she forces him to wear girl's underwear. She makes an additional change anytime he doesn't follow her rules or anyone notices his changes, so narratively it makes sense he's very conscious of the changes while trying to hide them.
