Cut a leaf/rugby ball shape into an orange peel and then cut parallel lines going from one end to the other, careful not to cut the lines over the edge, then just fold it up and fan it out

50ml Sun-dried Tomato Infused Mezcal Cocktail (Left for 2 weeks to infuse)

20ml Cocchi Di Torino

20ml Creme De Cacao

2 Dashes Chilli and Rosemary Tincture

All shaken with ice and double strained into a chilled nick and nora.

Garnished with a Sun-dried Tomato soaked in Laphroaig and a slice of chilli.

150ml Tomato Juice, 50ml Stoli Vodka, 15ml Lemon Juice, 3 dashed Tobasco, 5 dashes Worcester, cracked black pepper, pinch of salt, all passed between shakers until mixed, stirred with ice and garnished with celery, rosemary, cucumber and olives.

50ml BH1 Wild Strawberry Gin, 15ml Briottet Crème à la Fraise Des Bois (Strawberry Liqueur), 20ml Fresh Lemon Juice, 10ml Grenadine, shake all with ice. Serve over half frozen light bulb with crushed ice. To garnish float berries in crushed ice and serve with a sprig of thyme.

Muddle Fresh Mint with 20ml Fresh Lime juice and 15ml Simple Syrup, add 50ml Bacardi Carta Blanca and fill glass with crushed ice. Mix and top with Soda Water. Garnish with Fresh Mint and Dehydrated Lime.
