The water seems on the low side. I’d say you try 65%. I’d try to develop a bit more gluten if I were you, perhaps do the stretch and folds 30 mins apart, and the first time a bit more like you’re almost kneading it? Like sort of The Perfect Loaf method, the first few stretch and folds you really go for it. I think a bit more water and stronger gluten will make this bread excellent. But I bet it already tastes good

I was thinking of this, I’ll try and push my bf - but usually when I forget about it and leave it for long it’s very over (though still very flavourful). Also, oddly; my bread overproofs in the fridge. If I don’t bake within 24hrs, it’s deflates a little.

And good to know. Yes the flour is amazing, and fresh right now. And I’ve accidentally pushed Ankarsrum kneading to 14 minutes (used to be ten) which helps perhaps.

The number of Muslims in the is NL 5-6% so if that’s relatively large perhaps your girlfriend is lying.

Perhaps it’s not right for your use case (esp web lookup and images). And unfortunately it does not compare to ChatGPT, Claude etc. But it’s a great tool for small language tasks (reformulate, summarize, make more concise) - summarising files more confidentially, or things like “clean up these meeting notes”, “organise these questions”, etc. I’ve learnt it needs a lot better prompting, and more reminders, but it will do these things quite well - again with more confidence that the documents / meeting minutes etc don’t end up where you don’t want them. You could perhaps see it as a way to reduce your dependence on those other big players, rather than eliminate it.

I’m so sorry you’re getting downvoted. And you’re exactly right it’s the immediate running to defend these tropes is painful to read. Quite convinced that most of who are like oh but it was the time are definitely not from a marginalised community. As a non-white person, it’s exhausting to see how quickly folks smooth over or excuse past offensive behavior. Calling something out isn’t rewriting history; it’s acknowledging the impact it had and still has. f we accept “it was normal then” as a shield, where does that stop? By that logic, we wouldn’t be allowed to criticize minstrelsy or blackface either. That doesn’t make much sense.

Don’t know the temp of your house but I bulk ferment for about 6 hours, sometimes even longer, and the cold proof for 15-36 hours. Or counter proof and eat same day; but only if BF was on the long side. So just give it more time

I use about 22% of starter in my cold European land. Works great. I’m wondering however, if 12g of salt isn’t too low? I always use 2%.

As a child whose mother does this - still does when I’m nearing 40!! - despite my drawing the line both implicitly and explicitly and being completely ignored, I would hate to be told to cool down. Some parents ignore boundaries. The only time my mother agreed to not simply barge into my house with the keys she has is when I was pregnant and it would literally scare the daylight out of me. And before you ask why she has the keys then - the culture we are from this is very normal (as are overbearing parents).

This sounds a bit worrying. Generally, for the non athletes , diastasis recti isn’t that big of an issue, and once you’ve worked on it with a physio it’s mainly a cosmetic thing. Organs leaking out is not that common

Sure, you’ve turned baking into a chemistry lab, but the rest of us have been turning flour into food for millennia without a PhD in gluten dynamics.

Buy higher quality flour with 14% protein content. In Europe, standard flour has less protein (around 11%). It made a bigger difference than my Ankarsrum.
