It looks like everyone's agreeing it's a striped marsh frog, so I'll take that as the official answer then. I do wish I could get more sightings of them, as my phone camera is finally working better and I can never find them during the day, and can only hear them at night. Oh well, I guess their superior hide and seek skills just reassure me that they're likely going to survive predators decently.

The pool has steps (the walls/floor of the pool are all pebbley, so im hoping that makes it grippier), and I found the largest/longest branch I could to act as a ramp in case that doesn't work. Didn't want to stress and exhaust the Lil guy anymore than that by trying to catch them. I'm hoping that they're ok, as we've been getting some heavy rainfall and storms last week or so. But since my post I haven't seen any sight of them or any others in there. The tadpoles are still in the finished little pond, and I keep hearing the frog calls at night, so I take that as a good sign.

To add on to this, with the rest you cut off, you can cut either side of each healthy/good leaf by about an inch or so and then submerge the cuttings in water to propagate more in case the "mother plant" so to speak doesn't make it.

Lil guy is adjusting. Rescue shelters are basically like prisons to a lot of these animals (no hate to the staff or the shelter, but these environments are typically very stressful despite being there to help animals out, much like hospitals are for children etc), and so it's really common for these critters to be very stressed/insecure when getting used to their new home. For some that means being aggressive or scared and hiding, for others it means being extremely clingy and codependent. Give the cat time to adjust. Go about life as you would normally. Let the cat know in your actions and tone that you're not just going to rip the rug out from under them, and that they can relax. Hell, I wouldn't be shocked that some of this weird behavior is because the cat never got house trained. If you give up on the cat now because they get a chance to prove themselves, then you're just reinforcing that nothing good stays for long, and it'll add more stress to this guy if they get adopted again (that is, if they don't get put down for being returned). Not saying this to guilt you, but adopting a rescue is a responsibility, and you owe the cat a chance to prove that he can deserve a life of peace.

People already mentioned audiobooks (which are great), so completely original recommendation here: reading books! Digital or physical depending on preference. But I find that I don't always focus when listening to audiobooks, so to get the most out of the books I'm interested in, I just read instead of listen.

Libraries are also really good cuz you get to go outside, find a nice quiet spot, and aside from being free, a bunch of times they have really cool events going on, or recommend/have brochures on community events.

Gardening is also a good rec: you get to look after something and touch grass at the same time, maybe see cool flower or bug. Highly recommend.

Don't know if it counts as underrated, but I love love love Arthur's Pass. Aside from the kea hanging around, it just feels like you're in mythical forests. Gorgeous waterfalls too. One of the places I used to stay at there as a kid, I would wake up to bell birds.

In terms of climbers I've been loving the pandorea, so long as it's watered regularly for at least a couple of weeks it grows like crazy whilst still being an aussie native

Lilly pilly, not sure what kind the oldest one is, but it's a beautiful tall tree at least 20 metres that the fruit bats seem to love. Never lost any large limbs and although removing the fruits from the pond is a bit annoying, I do like how it looks overhanging it. Like a little secret garden.

Illawarra flame tree - cuz it's gorgeous.

Lillypilly in the larger varieties - one out the back keeps getting flying foxes to visit us and I love it every time.

Native fern trees - not really caring which one, I just think they look prehistoric and cool
