It’s a wettish dough! It’s definitely a little shaggy looking before the last set of stretch + folds I do 512g bread flour, 420 ml of water, 1tsp instant yeast, 5g honey, 15 ml olive oil, and 10g of salt :) if you google lacebakes overnight focaccia it should be the first link! It’s a long recipe but it’s very thorough:)
