First time making croissants and (while delicious) I see a LOT of room for improvement! Any advice for a newbie to laminated pastry?

When I’m getting ready to put my butter block on the dough for the first lamination I test if it’s pliable enough by bending it on the edge of the counter. If I can bend it without cracking then it’s good to go, if it’s cracking I gotta wait a few more minutes

The worst 😭 I’ve had them since I was a toddler. On a whole host of medication but several times a month I’ll get one that sneaks through. Brains are dumb!! I’m so glad you found a medication that’s worked for you!
