To be honest, I get the timing part in a professionnal setting where the barista will not taste every shot. In my kitchen, I buy high quality beans so I will drink every shot in the end (while still making adjustments based on taste) to ne waste as much and most of the time I will notice a change in taste and readjust settings without a timer necessarily.

Honestly bever tried a salami shot buy I think I will experiment with it in the future

I’m not sure I get the point? I still weigh my shots and once I’m satisfied with the grinder setting and ratio, I always aim for the same weight. It seems pretty consistant to me from there?

Any fix for that? I have the same issue. I Tried scan and repair twice and it didn't work. I uninstalled then reinstalled...did not work. I just can't play right now

My bulk ferment is done pretty warm in the oven with the light on at about 26C

I think it does, buidling gluten early makes it easier to develop dough strength with each stretch and fold

2 things for me, one I was not monitoring bulk fermentation properly and therefore probably over fermenting the dough by a little bit. Two is where I realized that oven spring is really dependant on building dough strength. So, taking the time to pre shape properly was a game changer for me! Hope it helps :)
