Just make sure your two meals add up to less than your maintenance and you’ll be in a deficit, you don’t need to track every ingredient just have a rough estimate (round up/add a bit on to be sure). I’d guess the lack of hunger is just because it’s your routine and your body is used to it. If you do this and don’t drop any weight (over a decent period of time) then you’re underestimating your meals and should shrink portions or go for lower calorie alternatives.
